Baked Fish Nuggets with Sweet Veggies

If you are looking for a pretty simple but healthy weeknigh meal, you found it!

This recipe works well with many different ypes of fish. We have used tilapia, cod, and catfish. We use tilapia the most often.

For the breading I used Shake and Bake Extra Crispy with some shreddd parmesan cheese.

Cut the fish into large nugget sized chunks. Brush or spray with extra virgin olive oil and coat in the breading mix.

Bake at 450 for 12-15 minutes, or until the crust is golden brown. Cook times will vary with the type of fish you use.

While that is cooking, julienne some veggies. I used red bell pepper, carrots, and zucchini. Put them in a skillet with a little extra virgin olive and a good sprinkle of brown sugar. Saute them until they are slightly soft.

My kids love these and I usually find out I haven't made enough! They even eat their veggies!
