Cheesy Chicken and Broccoli Pasta

Cooking dinner around here is never easy. I rarely find a meal that all four of us like and want to eat. Plus, I am not a chicken person. Most of the time, I think chicken is too dry. However, trying to make more budget friendly and healthy recipes means we can’t have red meat and seafood every night. In my desperation to find a chicken recipe that tastes good, is healthy, and it also super simple, I came up with this.

total time 25 min

makes 6 servings, 2-1/2 cups each

What You Need

8 oz. (1/2 of 16-oz. pkg.) spaghetti, uncooked

1/2 cup  Zesty Italian Dressing

4 cloves Garlic, minced

1 lb.  Boneless skinless chicken breasts, cut into strips

4 cups frozen Broccoli florets

1 1/2 cup  chopped tomatoes

1 cup Shredded Mozzarella Cheese, divided

Make It
COOK spaghetti as directed on package.
MEANWHILE, heat dressing and garlic in large nonstick skillet on medium heat.

Add chicken and broccoli; toss to coat.

Cook and stir 5 to 7 min. or until chicken is cooked through. Stir in tomatoes and 1/2 cup mozzarella cheese. Cook 1 to 2 min or until cheese is melted, stirring occasionally.
DRAIN spaghetti; place on serving plate. Top with chicken mixture, remaining mozzarella cheese and Parmesan cheese (if desired).

When my kids lived at home we had a weekly dinner that I called chicken/fish. This was because my son and husband both refused to eat chicken, and my daughter refused to eat fish.
So I would actually cook 2 main dishes, but try to make the toppings/sauces/presentation as similar as possible.
Mostly I miss the kids (they are grown up) but not when I think of all the work involved in meals like that.

Oh man that looks delicious!! I am planning to buy a whole chicken this week and need ideas for what to do with the extra meat! I’ll bookmark this page! Thanks!!
