The 2012 Summer Olympics provide the perfect reason to invite friends and family into your home to share a meal and observe history in the making.
 
Made in Oklahoma Coalition encourages Oklahomans to celebrate the 2012 London Olympics with three Olympic-themed recipes: Olympic Flame-Broiled Ribs, All-American Potato Salad and Gold Medal Molasses Cookies.
 
These recipes include ingredients from six MIO Coalition members: Bar-S Foods Company, Clements Foods Company, Griffin Foods Company, Head Country, Hiland Dairy Co. and Shawnee Milling Company.
 
Olympic Flame-Broiled Ribs
 
Ingredients:
One rack pork spare ribs
Three Tablespoons Head Country all-purpose seasoning
Your favorite selection of Head Country barbecue sauce
 
Preparation:
Preheat oven to 275 degrees.
 
Season ribs with Head Country all-purpose seasoning. Place ribs in oven and bake for two hours or until tender. When the ribs begin to brown, cover them with foil and cook for an additional one hour, 45 minutes.
 
Remove the foil and baste with your favorite Head Country BBQ flavor, and bake for an additional 15 minutes.
To check for doneness, take one of the larger bones and twist. If it twists loosely in the meat, the ribs are done.
 
All-American Potato Salad

Ingredients:
One and one-half pounds red potatoes, washed and unpeeled
Eight slices Bar-S bacon
One yellow onion, finely chopped
Four dill pickles, chopped
One cup Garden Club Mayonnaise
One-half cup Garden Club cider vinegar
One-half cup Braum’s or Hiland whipping cream
One teaspoon sugar
Two teaspoons Griffin’s jalapeño mustard
Salt and ground pepper to taste

Preparation:
Place potatoes in large saucepan and add water to cover. Bring to a boil and cook for approximately 20 minutes or until tender when pierced with a fork.
 
Drain the potatoes and when slightly cooled, cut into bite-sized pieces. Keep warm.
 
Cook bacon until crisp; drain and reserve drippings. Finely chop bacon.
 
Over medium heat, cook onions in drippings for about five minutes or until translucent. Add pickles, mayonnaise, vinegar, cream, sugar, mustard and salt. Heat thoroughly, but do not boil.
 
Pour heated mixture over potatoes and add crumbled bacon to top. Toss lightly and sprinkle pepper on top before serving.
 
Gold Medal Molasses Cookies
 
Ingredients:
Three-fourths cup grease from Bar-S bacon or melted shortening
One cup sugar
One egg
One-fourth cup Griffin’s molasses
Two cups Shawnee Best all-purpose flour
One teaspoon cinnamon
One teaspoon ginger
Two teaspoons baking soda
Additional sugar for coating
 
Preparation:
Preheat oven to 350 degrees.
 
Cream bacon grease or shortening and sugar until light. Add egg, molasses and dry ingredients in the order they are listed.
 
Shape dough into one-inch balls and roll in sugar until coated. Place balls onto cookie sheet, but do not flatten.
 
Bake 10 to 13 minutes until centers crack and edges start to firm.
