Grilled Stuffed Zucchini Canoes

This recipe was one of those I just made up as I went along because I was in the mood for grilled zucchini and I'm trying to minimize the amount of carbs I eat.

Grilled Stuffed Zucchini Boats


4 zucchini
1 lb of mild Italian sausage
1/4 cup chopped red bell pepper
1 TBSP chopped onion
1/2 cup marinara sauce
1/2 cup shredded mozarella cheese
extra virgin olive oil

Wash the zucchini then cut in half lengthwise and scoop out the insides.

Brush some extra virgin olive oil and a little bit of pepper onto the zucchini.

Grill the zucchini for about 20 minutes or until it just starts to get soft. I use a small tabletop charcoal grill so cooking times may vary greatly.

Meanwhile, preheat the oven to 350 and sautee the red bell pepper and chopped onion with just a hint of olive oil.

Then add the sausage and cook until browned.

Put the grilled zucchini in a baking dish an fill with the sausage mix. Top with marinara sauce and mozarella cheese.

Bake at 350 for about 10 minutes or until the cheese is melted.

Also good to note, this was just as good reheated in my lunch the next day!
