Loaded Breakfast Burrito

These Loaded Breakfast Burritos serve two purposes – they work great as funky appetizers and will freeze well for a quick breakfast.

 Ingredients:

·         Eight Country Cousin Pork Sausage Patties

·         Five slices Bar-S Fully Cooked Bacon

·         One dozen eggs

·         One-half cup Hiland Sour Cream

·         One teaspoon chili powder

·         One-half teaspoon ground cumin

·         One-half teaspoon garlic salt

·         One-quarter teaspoon ground black pepper

·         Two tablespoons (or one-half a four-ounce can) chopped green chilies

·         One red bell pepper, chopped

·         Two jalapeno peppers, chopped

·         One cup shredded cheddar cheese

·         18 small flour tortillas, warmed

 Preparation:

1.      Warm sausage patties and bacon in microwave according to package directions. Let cool, then crumble.

2.      In a large bowl, whisk eggs with sour cream, chili powder, cumin, salt, pepper and green chilies. Set aside.

3.      In a large nonstick skillet, sauté bell pepper and jalapeno peppers over medium heat for 5 to 7 minutes. Once tender, add eggs.

4.      Add crumbled sausage and bacon. Stir continually until eggs are done.

5.      Fill each tortilla with about one-third cup egg mixture and a sprinkle of cheese.

6.      Fold into burritos. Wrap each in aluminum foil to keep warm until serving.

7.      Serve with salsa and Hiland Sour Cream.

I will definitely make these! I love breakfast burritos and had never thought to make them ahead and freeze them!
