Quinoa Tabouli

Tabouli is typically made with bulgar or cracked wheat. That’s just not readily available where I shop so I tried it out with quinoa.

quinoa tabouli


1 package Simply Balanced Garlic and Olive Oil Quinoa
2 large tomatoes (diced)
1/2 a medium cucumber (peeled, diced)
3 green onions (diced)
3 mint leaves (diced)
1 1/2 cups fresh parsley (diced)
1 t pepper
1 t salt
1 lemon


Cook quinoa according to package directions. While it cools, mix all of the ingredients except the lemon together in a medium bowl. Add the quinoa when it has cooled. Add the juice from the lemon. Mix well. Serve.
