Portobello Mushroom and Veggies with Brown Rice – Daniel Fast Recipes

Today I started the Daniel Fast. Meals become more difficult to make because of the restrictions.

Breakfast – 1/2 cup oatmeal (not instant) and 8oz of unsweetened almond milk

Lunch – Apple and natural peanut butter, water

Dinner – Mushroom and Veggies with Brown Rice

Start your brown rice. It will take about 45-50 minutes to cook. I made 1/2 a cup. No butter. 1 1/4 cup water. A pinch of salt. Bring to a boil then cover and simmer for 45-50 minutes or until water has been absorbed. Fluff with a fork before serving.

Cut a portobello mushroom cap and bell peppers (1 each red, orange, and green) into bite size pieces. Add a little extra virgin olive oil and balsamic vinegar. Season with pepper and add 2 cloves garlic. Let this sit until you have about 20 minutes left on the rice.

In a pan add a little bit more olive oil and add your veggies. Sautee for 10-15 minutes or until the veggies become tender. Serve over rice.

Wow.  You have a lot more dedication than I do.  My idea of a fast would be the old Special K diet.  Good on you!  Clicking over from Twitter…nice to meet you!

That actually makes the Daniel Fast much more bearable. I am passing this on to several friends.
