Sausage & Macaroni Bake

This is an easy weeknight meal that doesn’t take much time or prep.

1 lb Sweet Italian Sausage
2 8oz cans tomato sauce
1 cup uncooked elbow macaroni1/4 cup chopped onion
1 red bell pepper, chopped
2 T oregano
1 cup water
2 t garlic powder
1t pepper
1/2 cup mozzarella cheese
1/4 cup parmesan cheese

Cook the macaroni according to the package directions.

Slice the sausage (or use ground sausage) and cook until brown.

Add in the tomato sauce, red bell pepper, onions, and water. Cook until it comes to a boil. Simmer uncovered for 5 minutes.

In a 9×13 pan combine macaroni, sausage mix, and mozzarella cheese. Top with parmesan cheese.

Bake at 350 for 20 minutes or until bubbly.

One thing I like about this recipe is many of the parts can be substituted depending on what you have on hand. No red pepper? Use green. Use a couple of different colors. Use chicken instead of sausage or any type of pasta instead of elbow macaroni. I like to make this at the end of the week to use up some things I already have on hand.
